Cold Sardine and Quinoa Cannelloni

Ingredients:

Cannelloni pasta.
Sardines.
Quinoa.
Tomato.
Cream cheese.
Basil.
Rocket.
Watercress.
Cherry tomatoes.
Salt.
Cumin.
Balsamic vinegar.

Method:

1) Cook the cannelloni pasta without breaking it in plenty of water.
2) Cook the quinoa.
3) Chop up the tomato and basil.
4) Mix together the chopped sardines, tomato, basil, quinoa and cream cheese.
5) Season with salt and a little cumin.
6) Fill the cannelloni with this mixture.
7) Serve on a bed of rocket, watercress and cherry tomatoes, dress with Balsamic vinegar.
